Innophos manufacturers several Sodium Polyphosphates that have various uses across both food and industrial applications.  

Sodium Acid Polyphosphate (SAPP) is used for various baking and leavening applications.  Some food grade SAPP products have slower reaction rates which make them ideal for refrigerated doughs, cakes, muffins, pancake mixes and baking powders. Others are faster acting leavening agents in donuts and prepared mixes.  SAPP is also used to maintain the natural white color of cooked potatoes.  In industrial applications, SAPP is used in metal finishing and water treatment for lead control, red and black water control, and sequestration. It can also be used as a dispersant in oil-well drilling muds.

Sodium Hexametaphosphate (SHMP) preserves flavor and color in beverages, and improves salt tolerance of phosphate applications for meat, seafood, and poultry brines.  It also helps extend shelf life.  In industrial applications, SHMP can be used as a deflocculant and sequestrant for water treatment, mining, oil well drilling muds, and textiles.  It is also used as a binding agent in refractory materials.

Sodium Tripolyphosphate (STPP) is used for processed meat, poultry, and fish applications.  STPP helps retain moisture and reduce sodium to deliver peak flavor and texture.  In industrial environments, it is used as sequestrant, deflocculant, and descaling agent in water treatment and sanitation.

Tetrasodium Pyrophosphate (TSPP) is used as a buffer for processed foods and puddings.  It is also used as a sequestrant and dispersant for water treatment and sanitation.

Sodium Trimetaphosphate (STMP) is used in starch modification and other food applications.  It can also be used in water treatment, metal cleaning, and wall board applications.
