Kena 22-4 EC

Kena 22-4® is a sodium phosphate blend designed primarily for use in corned beef and pastrami.  It also provides special advantages when used in marinated meats.  Kena 22-4 is significantly more stable in concentrated brines than STP.

Advantages

►More attractive cure color. Kena 22-4 is a lower pH phosphate blend that allows more rapid cure color   development than STP and avoids gray-brown appearance.
►Tender and juicy flavor. Kena 22-4 retains natural juices during smoking for better texture and flavor.
►Avoids "soapy" flabor and off-colors. Highly alkaline phosphates such as TSPP and STP can cause "soapy flavors and brown streaks in uncured meats. Lower pH 22-4 avoids these affects and provides tasty meats with uniform, attractive appearance.
►Good sliceability. Kena 22-4 interacts with the meat protein to form a uniform matrix that provides clean-cut, intact slices.
